Boston Lettuce Salad (Serves up to 4)
You will need: ¼ C sliced almonds, 1 large head of Boston lettuce (tear leaves), 1 C of fresh parsley, 10 fresh chives cut into 1 in lengths, 1 C fresh cilantro leaves, 4 T lemon and shallot vinaigrette
Preheat oven to 400 and spread the almonds on a baking sheet to toast (5 to 6 minutes until golden), toss occasionally.
Toss together in a bowl lettuce, cilantro, almonds, chives, and parsley with light vinaigrette
Mesclun Salad (Serves up to 4)
You will need: 6 C of Mesclun, 2 carrots (Halved then sliced thin), 1 can of chickpeas (rinsed 15 oz), ½ C dried cherries, ¼ C fresh dill sprigs, 5 T Balsamic Dijon vinaigrette
In a large bowl toss everything together lightly. Simple and delicious.
